Chocolate chip cookies (Diabetic friendly)

So I have this amazing friend who is a foodie.  In a BIG way.  However, she is a Vegan foodie.  Now I am an omnivore, always have been, probably always will be, but I have also eaten many of the baked good my friend has made.  They are ALL so yummy!  There are many occasions I have stolen borrowed her recipes and tried them at home.  When I make them they are yummy too, but as an avid Weight Watchers person, I substitute Truvia or Splenda baking mix for sugar and a white whole wheat flour/white flour combo for just white flour.

Anyway, I have mentioned to her a few times that she should blog, and lo and behold she finally decided to share her amazingness with the world and you can find her here at The Vegan Virtuoso. 

One of the first recipes she posted was for Vegan Chocolate Chip cookies.  They looked yummy, so I tried them using my traditional (gotta make them lower in sugar) substitutions.   Batch one did not turn out so good, ended up throwing the cookies and remaining batter out after Bluebell ate one and made a face that can only be described as “stinky face”.  I consulted Bluebell and the Virtuoso about making improvements, and they both gave me sound advice, which I took to heart.  I made batch two the way The Virtuoso did, so I could get the “taste” right in my head.  They were so good, but I gave them to Bluebell who has a higher metabolism and can tolerate more calories than me.

Then I tinkered some more and VOILA!  Batch three was healthier and oh so yummy!  This time amazing  cookies emerged from my oven!  They are two Weight Watchers points each!  So here they are:

Diabetic Chocolate Chip Cookies

  • 1/2 C coconut oil, melted (I just melted in the microwave)
  • 1/4 C firmly packed Splenda brown sugar baking mix
  • 1/4 C 1% or skim milk
  • 1 T vanilla
  • 1 1/4 C all-purpose flour
  • 3/4 cup white whole wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup Ghiradelli bittersweet chocolate chips

Preheat oven to 350F.
In a large bowl, whisk coconut oil, Splenda brown sugar, milk, and vanilla.
In a separate bowl, sift together the flours, baking powder and soda, and salt.
Stir dry ingredients into the wet just until incorporated, then fold in the chips.
Use a 1T cookie scoop to measure the dough and drop onto a cookie sheet. Use the back of the scoop or the palm of your hand to gently flatten the cookies.
Bake 10-15 minutes, until edges look firm and are starting to turn golden.
Let cool on cookie sheet 1-2 minutes before transferring to a wire rack. ENJOY!

Chicken Noodle Soup

For anyone who has been reading my posts for awhile you have read about my bff  The NewYorRican.  We have been friends for 6 years, and we just had instant chemistry when we met.  I really consider her a sister, and she is amazing!  Brave, loud, strong, funny, beautiful, smart, etc etc.  She is exactly what you would expect from a smart New York Puerto Rican woman!

She is also an amazing cook, and has taught me how to make Puerto Rican beans and rice in a caldero.  (Literally mans “Sturdy cooking pot”). She uses sofrito for the beans, and her rice is amazing too.  I will post those recipes one day as well.  Your tummy will thank me!!

Anyway, we were having coffee last week, and I knew she had made Orroz con Pollo for her daughter’s 19th birthday dinner.  I asked her what she did with the chicken carcass and she said , “I threw it out”.  My eyes must have bulged in my head because she took a step back from me.  I was all, “You mean you didn’t use the carcass to make soup?”  She was all, “I don’t know how to do that Ca.” So we decided since I am not going to be able to get into college this semester (a different post for a different day) and I would have some extra time on my hands we could have cooking classes together.  I could teach her how to make the foods I make for my family such as chicken noodle soup, beef and barley stew, potato soup, pork tenderloin, etc, and she could teach me how to make the foods she cooks for her family.  A deal was struck and we started right away.

A few days ago the NewYorRican served her family roasted chicken and I told her to put th carcass in the refrigerator.  She did and the next day we made:


1 chicken carcass, water to cover, 3 cups chicken stock or 3 bouillon cubes, celery, carrots, dill weed, i small package egg noodles.

Chicken soup is the least expensive and in my opinion the tastiest way to make homemade chicken noodle soup. This is how The NewYorRican made her soup:

She placed the chicken carcass in a large pot and covered it with water.  Then she boiled the chicken for 1 hour.  Once it had boiled for an hour she placed a colander in another large pot and poured the chicken and the chicken stock into the other pot, reserving the carcass to pull the meat off after it had cooled.

The pot with the chicken stock went back onto the stove and The NewYorRican added three chicken bouillon cubes to intensify the chicken flavor of the stock. She then peeled carrots and chopped them into pieces and put them in the pot.

She also chopped celery into pieces and put them in the pot.  Then she added about 2 tsp of dill weed (to taste).  By then the chicken carcass was cool enough to touch and she proceeded to pull the remaining chicken from the carcass to put into the soup.

She let all of the flavors simmer for about 30 minutes, tasting as it simmered until the sup reached the flavor she wanted.  15 minutes before serving she added a small bag of egg noodles, and once they were cooked (in about 10 minutes) she served the soup to her family.

YUM! Hearty and healthy!

You ca season your soup to your taste.  Some other spices that can be added are: thyme, garlic, and of course salt and pepper to taste as well.  Since she used a rotisserie chicken the chicken added lots of yummy flavor to the soup.  I am a huge fan of dill in chicken sop (my dad always used that when he made Chicken soup with Matzo Balls).

I know her family enjoyed the soup, and now she has another recipe in her arsenal against the never ending battle to feed a large family healthy, hearty, inexpensive meals.  🙂

Questions I would like answers to

I don’t know about anyone else, but I can only assume that people have the same thoughts run through their heads that run through mine.  And if not, please let me keep my fantasy that I am a normal person and don’t let me know how strange I truly am.  Thanks!

So for this Friday afternoon, end of a crazy week, these are my top 10 “Things that make me go hmmmmm” questions for today:

1) Have you ever been driving down the road (usually the highway for me) and see a car that looks as if there is no driver?  Then when they pass you (or vice versa) you realize it is because the driver is LAYING DOWN to drive?  Seriously, how can they see where they are going?

2.)  Why oh why do young men wear their pants around their thighs to show their boxers???  That just makes me crazy!!

3.)  Do you ever see someone and wonder if they even looked in the mirror prior to going out in public?  I admit I am no Bo Derek, but seriously what was this lady thinking??

4.) While driving down the road, you know the person who waits until the  very last minute to merge (even though they have seen the sign to merge  for 1 mile), and then barely misses hitting your vehicle?  Did you ever wonder where and how they got their license???

5) Why is it the minute I get home from a long day as I walk into the house one of my kids will say, “Mom, I need a (Insert any school item) for a project that is due tomorrow.  REALLY??

6) Have you ever wondered about the parents of the bratty kids?  Do they KNOW their kids are brats?  Are they oblivious or do they just not care?  You know the kids I am talking about.  I actually saw a kid yesterday standing by a water fountain with a cup saying to people as they walked by, “You wet your pants.” and splashing them with water.  You have got to be freaking kidding me!!  Where were her parent(s)???

7)  Barking dogs…….sigh.  My next-door neighbor has two little chihuahuas.  Yes they are cute, but they bark day and night.  The dogs are outside a LOT and they bark and bark and bark………REALLY?  My dog barks too, but I put him in when he barks so he doesn’t disturb the neighbors.  Can’t you hear your dogs barking, or do you just not care???

8) The weather has been nice a few days this week.  I like to drive with my windows down and/or my sunroof open.  However, I DO NOT want to hear you rap music in my car while I am driving. Do you need to blast the rap and turn the bass up so loud my ears throb??  Really?  Enjoy your music, but keep it to yourself please!!!  Does anyone else feel this way???

9)  Why oh why do people eat the food at the grocery store before they buy it?  I understand if your kid is starving and crying and you forgot to pack a snack.  I even am okay with you getting a box of crackers and opening them before you pay for them. You pay for the whole box anyway.  But have you ever seen the people who get a bag of grapes and eat them while they are shopping?  Or let their kid eat them while shopping?  Ummmm, you pay for those by the pound people.  If you eat 1/2 of them while you are shopping that means you just stole that fruit.  Unless of course you are planning on having your kid upchuck them so they can be weighed….. of course then they will cost more because of the liquid weight of their entire stomach contents….but you know what they say…..buyer beware……

I really don’t have a 10th question, so I want you all to insert your own question here and comment with it.  Then I can find out about the things that tick you off and how to answer those questions we all want to ask, but never do….
