I scroll on Facebook. Time wasting, black hole, Facebook. But for every minute I spend scrolling on Facebook, Karol spends 5. So often I open up my app and see things she has posted to my timeline and 99.8% of the time it is recipes for things she wants to try…in other words the things she wants me to make.
I like to make real food, or in other words foods with fresh ingredients that are not processed. The only thing that came out of a bottle for the Feta Stuffed Chicken Breasts was the dressing and that is organic so I was fine with it.
Now don’t get me wrong, that is perfectly fine with me! I love to cook and I love to bake. Baking is really just an alternate form of chemistry…measuring needs to be precise so things turn out the way you want. But cooking is like modern art, just throw things together and it usually turns out okay. No need to measure, just toss it in a pan, use your imagination…
So I did embellish a bit with this recipe. For example we do NOT like cooked spinach so it was omitted from the original when I made it. You could totally add it back in when you stuff the chicken. Totally up to you. Or do sun dried tomatoes stuffed in the feta instead of a tomato sauce. I prefer the sauce because it keeps the meat moist. and ….yum! So without further ado here is my version of
FETA STUFFED CHICKEN WITH CUMIN TOMATO SAUCE
4 boneless, skinless chicken breast halves
1/4 cup feta cheese
Salt and ground black pepper to taste
1 tablespoon olive oil
4 teaspoons cumin
2 teaspoons coriander
6 medium tomatoes, seeded and chopped (Or use can use grape tomatoes, but more of them)
optional: Greek dressing or red pepper and feta dressing from Whole Foods
Cooking Directions:
Optional: Marinate chicken breast in 2 tbsp of Red pepper and feta dressing from whole foods (or any brand of Greek dressing) for about 30 minutes. This will give the chicken a lovely flavor and add moistness to the meat.
In side of each chicken breast halve, make slit. Stuff one quarter of feta cheese into each pocket. Season with salt and pepper.
In large, non-stick skillet over high heat, warm olive oil. Add chicken; sauté on each side until nicely browned and cooked throughout, about 5 to 8 minutes per side. Remove chicken from heat and set aside.
Reduce heat to medium. In the same skillet, add cumin, and coriander. Sauté one minute. Stir in tomatoes; cook until they become sauce-like, about 6 minutes.
Return chicken to pan; warm in pan for 1 minute and serve.
Makes 4 servings.
Marinate chicken in dressing:

Slice a slit in breast for stuffing:
Stuff feta in chicken:
Saute chicken for 6-8 minutes on each side:
Remove chicken and set aside. Then cook tomatoes and spices until tomatoes become saucy.
Serve over chicken. I garnished with more feta cheese.
And served with green salad. Delicious!!!
This meal was super easy, very tasty ad healthy.
